The Evaporator
The evaporator heats the sap, which is usually only 2-4% sugar. The water in the sap evaporates and leaves syrup behind. It takes 40 gallons of sap (or 20 half-full buckets) to make one gallon of syrup:
(gallons of sap/40) = gallons of syrup
